Pav Bhaji

Pav bhaji is an Indian snack/chat...I make it very often at home,whenever i see bunch of veggies lying in my fridge that i need to use up,i immediately think of making pav bhaji..It is a flavourful and one pot meal !


Ingredients needed
Beans - 15
Carrots - 2
Eggplant - 3
Potato - 3
Capsicum - 2
Peas - 1cup
cauliflower - 2 cups
onion - 1 big finely chopped
Tomatoes - 3 finely chopped
Green chillies - 3
red chili powder - 1/2 tsp
Pav bhaji masala - 3 tbsp
Coriander powder - 1/2 tsp
Amchur or dry mango powder - 1/2tsp
Garam masala - 1/2tsp
Salt to taste
Oil - 4tbsp
Cumin seeds - 1tsp
Coriander leaves for garnishing
Lime or lemon juice to taste


Method
Step 1 - Wash the vegetables and chop them in big pieces and pressure cook them for 4 to 5 whistles.
Step 2 - When it cools down mash them and keep it aside.
Step 3 - Heat oil in a deep pan and add cumin seeds,when it splutters add onions and fry until it becomes translucent.Add tomatoes along with pav bhaji masala,salt,turmeric powder,red chili powder,garam masala and amchur powder.Let it cook for 10 to 15 minutes on a medium flame.
Step 3 - Add the mashed vegetables to it and mix well.simmer it down for 10 minutes and finally add chopped coriander leaves and lime juice.
Serve it with lightly toasted pav along with sliced onions...
Yummy Pav bhaji is ready to eat !
